Hi My daughter and I have already purchased Japan Rail Passes and we have booked a hotel for the time we are in Tokyo 3/23/3/28. We want to go to Mt Fuji, Big Buddha, day trips. But we need to return to Tokyo each night.

You can do DIY day trips, or book a tour through a company like Voyagin (we recommend them).
