Narita & Tokyo for celiacs

Does anyone have any advice for eating without wheat (including soya sauce) contamination in the local restaurants?

My friend Jodi wrote a fairly extensive blog post about being a celiac in Japan: The Essential Gluten Free Guide to Japan (2023 Update)

My only additional comment would be not to worry about her point on “offending the chef”, people in Japan have allergies too so the chefs will understand!
